Ogbono soup is nigerian delicacy which is most enjoyed with Fufu because of its slimy nature which helps the lumps of Fufu slide down easily.it is loved by both the old and younger generation.if your husband or kids do not like Ogbono soup because of its slimy nature, you can add a little egwusi or okro to make it look rich.
most people like their Ogbono soup with no added vegetable, while some will pnly eat it, if it has vegetable in it. Our mother's, the older generation because of hard times during their days, and how scarce most food ingredients were, prefer to use either egwusi or okro and vegetable to make the soup rich.
INGREDIENTS FOR OGBONO SOUP.
1. Assorted meat, fish, beef.
2. Dry fish, stock fish (optional)
3. 2 handful Ogbono seeds
4. 3 cooking spoons red oil
5. Vegetable : pumpkin leave or bitter leaf.
6. 1 handful crayfish.
7. Pepper and salt .
8. 1 medium onion
9. 2 stock cubes (knorr)
UTENSILS USED
1. pot
2. Blender
3.chopping board
4 . knives.
HOW TO COOK OGBONO SOUP
1. grind the Ogbono with dry pepper and Crayfish, using your blender or food processor
2. Wash,chop the pumpkin leaves and squeeze out the water the excess water (optional )
3. cook the Assorted meat with stock cubes and chopped onions.
4. Boil some water and set aside.
COOKING DIRECTION
* Pour the meat stock in a clean pot.
* Add a little water to it
* Allow to boil well
* then add 3 cooking spoons of red oil.
* stir and add the grinded/blended Ogbono to the meat stock and stir immediately to avoid sticking together. You will notice the Ogbono start to thicken and draw.
* keep stirring till the Ogbono has completely absorbed the meat stock.
* Add a little more water to it and check the thickness depending on how you like it.
*if still too thick add more water and stir
* make sure that the heat is set to low (cover the pot and once it starts to simmer stir every
2-3 minute for 20 minutes)
* After 20 minutes, the Ogbono should be well cooked
* Add the Assorted meat and fish
*salt and maggi to taste.the Ogbono may have thicker from cooking so add a little water and stir well. Cover and cook till the content of the pot heats up well.
* At this point you turn off the heat and serve with either gifu ot semo.
* if you prefer your Ogbono with vegetables, once the content of the pot all heats up, add the vegetable, stir very well and cover the pot and turn off the heat.leave to stand for about 5 minutes and serve.
*N.B
use stainless steel or aluminium pots in cooking your Ogbono soup.non-sticky pots are not the best for cooking Ogbono soup.
