LEMON CAKE


Oven Time: 45 minutes

Prep Time: 15 minutes

INGREDIENTS

•1 small lemon (skin grated for making the cake)

• 250 g caster sugar

• 4 eggs

• 200g butter, plus extra for greasing the cake pan

•125g plain flour, plus extra for dusting

• 2 teaspoons baking powder

• 1 leveled teaspoon salt

METHOD

• Preheat the oven to 170C/150C fan/gas 3. (Butter the sides of your desired cake pan)

•2  Wash the lemon and grate out the skin

3• Add the eggs, butter, grated lemon skin,to the mixing bowl and mix together until combined.

4• Sift the flour and baking powder together and add to the machine, allow to mix just until the ingredients come together. Empty the mixture into the prepared cake pan and bake for 40-45 minutes, or until a knife inserted into the centre of the cake comes out clean.

5• When the cake is ready, take it out of the oven and let it sit in the pan for 10 minutes and carefully remove the cake from the tin before transferring to a serving plate.

6• Allow the cake to cool completely and serve.
