Chicken Lettuce Wrap





Ingredients

• 1 tablespoon olive oil

• 1 pound shredded chicken

• 2 cloves garlic, minced

• 1 onion, diced

• 1/4 cup hot sauce

• 2 tablespoons soy sauce

• 1 tablespoon wine vinegar

• 1 tablespoon grated ginger

• knorr or maggi to taste

• salt to taste

• 2 balls of irish potatoes, precooked and diced

• 2 spring onions, thinly sliced

• freshly ground black pepper, to taste

• 1 medium size lettuce Head.

• 2 diced red pepper

Preparation

• Heat olive oil in a saucepan over medium high heat.

• Add shredded chicken and cook until browned, about 3-5 minutes, making sure to stir the chicken as it cooks; drain excess fat.

• Stir in garlic, onion, hot sauce, soy sauce, wine vinegar, ginger,until onions have become translucent, about 1-2 minutes.

• Stir in irish potatoes,spring onions and diced red pepper until tender, about 1-2 minutes;

• Season with salt, maggi and pepper, to taste.

• To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf.
